Single Origin Coffee | Washed Bourbon | Peru
Grown high in the hills of Santa María, Jaén in Peru’s Cajamarca region, this exceptional single origin coffee is produced by César Sampertegui — widely recognised locally as a pioneer of innovation.
Farming at 1,800 metres above sea level on his 3-hectare plot in La Cascarilla, César was one of the first producers in northern Peru to embrace experimentation and post-harvest refinement. As an early and active member of the Aromas del Valle cooperative, founded in 2015 to improve transparency and producer support, César played a key role in shaping a culture of quality within his region.
Today, Aromas del Valle supports more than 500 smallholder producers across Jaén, San Ignacio and Cutervo, providing social, economic, technological and environmental support to elevate both livelihoods and cup quality.
César’s leadership helped build trust and open new pathways for fellow farmers — a legacy that continues to influence the community.
Processing & Terroir
This washed Bourbon microlot begins with careful hand-selection of fully ripe cherries. The coffee undergoes an extended 96-hour fermentation in tanks before pulping, allowing complex sugars and clarity to develop. It is then dried for approximately 165 hours on raised African beds at cool ambient highland temperatures — around 21°C — encouraging even moisture loss and refined flavour development.
Grown in clay loam soil with generous annual rainfall (approximately 1,800mm), the combination of altitude, climate and careful processing results in a cup that is clean, structured and beautifully expressive.
Roasted here at Welcome Dose, this Peruvian single origin coffee highlights the elegant sweetness Bourbon is known for — delivering clarity, balance and a refined profile suited perfectly to filter brewing or a lighter espresso style.
Expect a cup that is sweet and composed, with delicate fruit tones and a silky finish. Look for notes of plum, lime, brown sugar and milk chocolate.
