The Story
Single Origin Coffee Microlot | Natural Process | Honduras
Honduras doesn't always get the recognition it deserves — yet it quietly exports more coffee than any other nation in Central America. The difference here is in the people willing to push past the country's bulk reputation and commit to something more intentional. Roger Dominguez is one of them.
A young producer in Marcala, La Paz, Roger inherited his father's farms in the early 1990s and has since developed three parcels totalling 3–5 hectares each, perched above 1,500 metres where the cool highland air slows ripening and coaxes natural sweetness into every cherry.
La Paz is high, still, and unhurried — exactly the kind of place that rewards a natural process. Ripe cherries are sorted carefully and laid whole on raised beds or patios to dry for a month or more, the fruit slowly concentrating around the seed. It's a method still relatively rare in Honduras, and Roger's precision with drying is what sets this microlot apart.
