About the Beans
The Story
Single Origin Coffee | Natural Process | Ethiopia
Yirgacheffe’s Gedeo Zone has built its reputation on some of Ethiopia’s most sought-afer coffee, its dense highland vegetation and moderate wet and dry seasons shaping cups that can taste unmistakably of blueberry.
Mr. Mengeche Derso farms 15 hectares here, at 2,300 metres above sea level. Now 62, he has spent virtually his whole life growing coffee in these hills, work recognised by government organisations for its consistency and care. He farms alongside four of his 12 children, enriching the soil with animal manure and plant remnants rather than synthetic inputs. His lot is part of Cafe Imports’ Single Farmer Project, built to trace coffee back to the individual grower and pay them directly and transparently for it.
Cherries are sorted for ripeness, rinsed clean, then spread across raised beds to dry naturally for 8 to 25 days, turned constantly to dry evenly under the open sky.
Look for notes of dried pear and mild caramel, with good sweetness and a mellow, balanced acidit
