The Story

Chillurco sits in the upper reaches of Huila, one of Colombia's most storied coffee departments, where volcanic soils and elevations nudging 1,800 metres push smallholder farms to produce some of the country's most structured, expressive cups.
Finca Los Sauces has been part of that landscape since 1970, when Sergio Calderon's father first worked this land. When Sergio married twenty years ago, he and his wife made a deliberate choice: to commit fully to the farm, to the coffee, and to the community around them. Their two children have since grown into that same dedication, helping shape what is now a 3.5-hectare family project built on volcanic soils and quiet pride.
Cherries are handpicked and mechanically depulped before fermenting in concrete tanks on the farm. They're then dried on a combination of patios and raised beds — a method that rewards patience and produces the clean, balanced profile this region is known for.
Look for notes of tea, orange zest, marmalade, red currant, and chocolate — with high body and a measured, easy acidity.
