The Story
Single Origin Coffee | Washed Process | Colombia
Huila sits in the southwest of Colombia, cradled between the Central and Eastern Andes, and has long been regarded as one of the country's finest coffee regions. Its volcanic soils, dramatic elevation shifts, and consistently cool temperatures create the kind of growing conditions that reward patience — and varieties that demand it.
Fabian Muñoz established Finca El Encanto in 2018 with a clear sense of purpose — to grow distinctive, high-quality varieties on his three-hectare farm perched at 1,930 metres. Pacamara, a large-bean hybrid of Pacas and Maragogipe varieties originating in El Salvador, is an unusual choice for Colombia. It's demanding to cultivate and lower-yielding than most, but at altitude it develops a complexity that makes the extra care worthwhile.
Processing at El Encanto is precise and unhurried. Cherries are hand-picked at full ripeness, depulped on-farm, then fermented in concrete tanks under controlled conditions. After washing, the coffee dries slowly on patios and raised beds — a gentle finish that preserves the variety's natural structure and aromatic clarity.
Roasted here at Welcome Dose, this Colombian single origin coffee displays flavours of black currant, tropical fruit, and a fizzy, complex brightness carried on a full, sweet body.
