Lima Coffee is a cooperative of smallholder farmers in Peru’s highland Cajamarca region, led by cupper and quality pioneer Rony Lavan.
At 1650–1800 masl, farmers grow Caturra, Typica, Bourbon, and Catimor across loamy, fertile soil. Rony’s focus on traceability and high cup quality has helped bring this community's coffees into the spotlight of specialty buyers worldwide.
Cherries are depulped the same day they’re picked, fermented in open air for 12–18 hours, washed clean, and dried on patios or raised beds.
