Ethiopia Yirgacheffe — Lemlem Shibiru Washed (Single Origin)
Coffee beans roasted at Welcome Dose Specialty Coffee, Rosebery
Lemlem Shibiru is one of the very few female producer-owners in Ethiopia’s celebrated Yirgacheffe region. Raised among the lush gardens of Kochere, she spent years working as a processing specialist for local co-ops, quietly saving every birr with a single goal in mind: to run her own washing station. In 2022 that dream took shape on a two-hectare plot near Biloya town, where Lemlem now receives cherries from her family’s 5.3 hectares and from more than 100 neighbouring smallholders. By paying fair prices and sharing her know-how, she has become a catalyst for quality and opportunity in her community.
This lot showcases her meticulous washed process. Hand-picked cherries are pulped on the day of harvest, then immersed in clean spring water for a 48-hour wet fermentation, with the water refreshed every 24 hours. After a brief soak, the parchment moves to shaded “skin-dry” racks before spending ten slow days on raised beds. Each morning the coffee bathes in soft sun; during the midday heat it is protected under mesh and nylon to protect the drying coffee beans and achieve an even 10 %–10.5 % moisture content.
