Farms feeding the Karimikui factory sit at 1,800 metres above sea level in Kirinyaga county, where annual rainfall of 1,100 millimetres and temperatures of 13 to 26°C support steady, even ripening.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eKarimikui is run by the Rungeto Farmers Cooperative Society, established in 1997 and now numbering 850 smallholder members.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eCherries are pulped and fermented overnight to break down the sugars, then carefully cleaned and soaked before moving to raised beds by the Nyamindi River, where they dry for 7 to 15 days under constant hand-turning and sorting.
